Cocoa Chia Seed Pudding

Ingredients 

2 cups milk of choice

½ cup chia seeds

¼ cup unsweetened cocoa powder

¾ tsp vanilla extract

2-3 Tbsp sweetener of choice (honey, maple syrup)

½ tsp spice (cinnamon, cardamom, pumpkin pie) (optional)

3 Tbsp fruit of choice (dates, berries etc.) (optional)

Directions:

Option 1: Textured pudding

  1. Mix ingredients together, portion into jars.
  2. Let sit in the fridge for at least 2-3 hours or overnight before enjoying.

Option 2: Smooth pudding/mousse

  1. Add all ingredients to a blender and blend until smooth.
  2. Portion into jars and let sit in the fridge for at least 2-3 hours or overnight before enjoying.

Dietitian’s Tips:

  • Add a teaspoon of ground flax seeds or hemp hearts to boost the healthy fats even more!
  • Add half a very ripe avocado for another brain boosting ingredient. If you do this, consume the puddings within 2-3 days.
  • Get creative and use extra ingredients or flavours that bring you joy! Try apple pumpkin, salted caramel and more.
