Cajun Chicken

We make certain to include culturally diverse options each week and one of our most popular recipes to date is our Cajun chicken with rice. Check out this simplified version to add to your home menu that promises to delight both kids and adults.

Cajun Chicken

Ingredients:

4 boneless skinless chicken breast, about 2 pounds

2 tablespoons olive oil

2 teaspoons salt

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon black pepper

½ teaspoon dried oregano

½ teaspoon dried thyme

½ teaspoon cayenne pepper (omit this if the spice is a little too much for your family!)

1 tablespoon unsalted butter

1 tablespoon sliced green onions

Directions:

  1. Flatten the Pieces– Thoroughly dry each chicken breast with a paper towel. Place one piece between two plastic sheets or inside a large plastic bag and pound to an even thickness until about ¾” thick. Repeat with the remaining pieces.
  2. Making Cajun Seasoning– In a small bowl, combine the salt, paprika, garlic powder, onion powder, black pepper, oregano, thyme, and cayenne.
  3. Season the Surface– Evenly sprinkle both sides with the Cajun seasoning.
  4. Cook the Chicken – Heat a large skillet over medium heat. Add olive oil, and once hot and shimmering, add the chicken breasts. Cook for 3 minutes, then reduce the heat to medium-low. Cook until golden brown, about 2 minutes. Flip the pieces and add the butter. Occasionally baste once melted. Cook for about 5 to 8 minutes or until cooked through.

Cajun chicken can be served a variety of ways!
