Beet Hummus

February is referred to as the month of love. Valentine’s Day is often celebrated with heart-shaped chocolates and treats. Here’s a healthy Valentine’s Day recipe you can enjoy with the whole family. The beets are nutrient packed and turn the hummus a bright pink colour that the kids will love! Serve as a side dish with your favourite vegetables and crackers or use as a delicious protein packed spread on a sandwich or wrap.

Ingredients

1 small cooked beet (roasted or steamed)
1 15 oz can chickpeas
1 large lemon (zested)
½ large lemon (juiced)
2 cloves garlic (minced)
2 Tbsp tahini
¼ cup olive oil
Pinch of salt and pepper
Water (optional)

Instructions

  1. Add the beat into a food processer and blend well.
  2. Add remaining ingredients except the olive oil and blend until smooth.
  3. Drizzle in the olive oil as the hummus is mixing.
  4. Add water to thin to desired consistency
