Baked Avocado “Fries”

Foods rich in healthy fats boost brain function as our brains rely heavily on fats for growth and maintenance. Avocados are a great source of healthy monounsaturated fats. These avocado fries are super simple to make and can be served with your favourite dipping sauce.

Yield: 4 Servings

Ingredients

2 Avocados

¼ cup Flour

2 Eggs, beaten

1 Cup Panko Breadcrumbs

Olive oil spray

Instructions

  1. Preheat oven to 400F.
  2. Half the avocados, remove the stone and then slice each half lengthways just to the skin to form “fries”. Use a large spoon to gently scoop out the slices.
  3. Put the flour, egg and breadcrumbs in 3 separate bowls.
  4. Dip the avocado in the flour, followed by egg and then coat in breadcrumbs.
  5. Place on a greased baking tray and lightly spray with oil.
  6. Bake for 15 minutes or until crispy and golden brown.
